It was the end of 1950 when José, who would later become known as Señor Gaibor, and María rented a small stone house on the road to the fair to move their tavern, which they had opened years earlier on the outskirts of the village, having recently arrived from Mariz.

 

These where times of scarcity and they kept their business going by selling mainly wine and canned sardine sandwiches. José was soon widowed and had to take care of his only son, Toñito, on his own, while running his business , which was also his home.

 

In 1969, Toñito married Pili to take over the running of the establishment. This marked the beginning of a new era in which the purchase and subsequent renovation of the premises allowed the small tavern to become a restaurant, where the most representatives traditional dishes of our cuisine made up the menu and continue to serve as inspiration to this day. In 1970, their daughter, also named Pili, was born.

 

After the early death of Toñito and Pili, Señor Gaibor granddaughter took over the family business, accompanied by her partner Carlos. Together, they worked hard and defended the business, where they continued to live, constantly envolving and adapting to offer the best possible service at all times.

 

Today, it is his son Antón, José's great-grandson, who runs the restaurant. Merecedes, David, Adrián, Mmadou. Carmen, Ofelia and Eneko complete a team of professionals who give their best every day so that you can enjoy a family experience, with humble and honest cuisine, where respect for the product is the star of the show.
