1950

It was the end of 1950 when José, who would end up being known as Señor Gaibor; and María, rented a small stone house on the way to the fair to move their small tavern, which years before had opened in the suburbs, just arrived from Mariz. Those were lean times in which they defended their business by selling mainly wine and canned sardine sandwiches.

1969

José was widowed early, having to take care of his only son alone while he ran his business, which was also his home. In 1969; Toñito, son of Señor Gaibor, married Pili to take over the business. Thus began a stage in which the purchase and subsequent reform of the establishment, allowed that small tavern to become a restaurant, where the most representative traditional dishes of our cuisine made up its menu, and continue to be an inspiration today.

1990

After losing her parents; Pili, Señor Gaibor's granddaughter, was the one who took the reins of the family business, accompanied by her partner, Carlos.

Between the two of them they worked and defended the Home, where they never stopped living, with constant evolution and adaptation to offer the best possible service at each moment.

2024

Today, Pili and Carlos still leading Casa Gaibor, accompanied by their son Antón.

Mercedes, David, Adrián and Ofelia complete a professional team giving their best to offer a family experience, with a humble and honest kitchen, where the respect for the product is the main character in a restaurant where the heart of the tavern will never stop to beat.
